I wanted something quick, healthy, and full of flavor, so here’s how I made this simple side dish:

1. Heat a little cooking oil in a large skillet over medium heat.
2. Slice the yellow squash and zucchini into thin rounds.
3. Chop one onion into bite-sized pieces.
4. Slice the red and yellow bell peppers into strips.
5. Add the onions to the skillet first and cook for 2–3 minutes until they begin to soften.
6. Add the squash, zucchini, and bell peppers.
7. Stir everything together and cook over medium heat, stirring occasionally, until the vegetables become tender and develop a nice golden-brown color.
8. Season to your taste with your favorite seasonings, then serve hot and enjoy!
